Chef’s Table by Josh Barnes is an intimate, estate-to-plate dining experience set at the heart of Swinton Estate. Rooted in a deep respect for provenance and seasonality, it offers a considered journey through Yorkshire’s most exceptional produce.
Seating just 12 guests, the experience is both immersive and precise. Proudly featured in the MICHELIN Guide, it invites guests to engage with the craft of fine dining at its most personal – a moment of quiet theatre where each dish is finished and presented before you.

With over a decade spent in some of the UK’s most respected MICHELIN kitchens, Chef Patron, Josh Barnes brings a refined yet grounded approach to modern British dining.
His philosophy is guided by the land. Deeply connected to North Yorkshire and the surrounding region, Josh works instinctively with the seasons, shaping dishes that reflect both place and time. His menu is thoughtful and restrained, allowing exceptional ingredients to speak with clarity and purpose.
Chef’s Table by Josh Barnes is open for an eight-course dinner Wednesday to Saturday from 7pm, and for a lighter five-course lunch on Saturday, from 12.30pm.
Throughout March, and July – August, dinners on Wednesday and Thursday will be five courses.

At the core of the experience is our estate-to-plate ethos — a commitment to sourcing with integrity from the land itself, the majority of which is from our 20,000-acre Estate.
The result is a menu that is both expressive and sustainable — a true reflection of Yorkshire’s landscape, its heritage and its future.
From wild garlic in early spring to wild mushrooms throughout the year, the 20,00 acres of the Swinton Estate acts as our very own larder of fresh, Yorkshire produce that moves with the seasons.
The UK’s largest working kitchen garden in a hotel, our Kitchen Garden is overseen by Grounds & Gardens Manager, Joe Lofthouse, who grows a vast variety of produce throughout the year.
Swinton Park Hotel lies within a 200-acre deer park, home to nearly 200 wild fallow deer, managed by Deer Ranger Ollie Seage. A favourite protein of Chef Patron Josh Barnes, venison features on the Chef’s Table menu when in season.
For special occasions and celebrations, make it exclusively yours and indulge in our private Chef’s Table by Josh Barnes experience. Available for between 2–12 guests with our dedicated team on hand to guide you through an individually tailored evening – just for you.

Before making a reservation at Chef’s Table by Josh Barnes, please take note of the following information regarding dietary requirements:
Chef’s Table by Josh Barnes is an intimate fine-dining experience, championing hyper-seasonal produce and an estate-to-plate ethos, with lots of unique and interesting ingredients showcased on our menus.
The tasting menu is prepared by Josh and the team exclusively for you on the day, and therefore, we ask the lead guest to make us aware of any dietary requirements or intolerances at the time of booking, or at least 48 hours before the date of your reservation.
Regrettably, it may not be possible to accommodate any dietary requirements not listed on the booking notes after the outlined timescales.
Chef’s Table by Josh Barnes is pleased to offer a vegetarian and vegan tasting menu alongside our regular tasting menu. Certain other dietary requirements can be catered to at the discretion of the Chef, with prior notice.
Although we can cater to dietary requirements, we cannot guarantee to be completely allergen-free, as allergens may well be present in our kitchen.

Due to the nature of the dining experience at Chef’s Table by Josh Barnes, regrettably, we are unable to cater to dislikes. We politely urge guests to keep an open mind and ask for confidence in our menu composition and preparations.
Children under the age of 16 are not permitted to dine at Chef’s Table by Josh Barnes.
There is no strict dress code at Chef’s Table by Josh Barnes, however, smart casual attire is recommended.
We kindly ask that you refrain from wearing sportswear and flip flops.
We kindly ask that any cancellations to your reservation be made no less than 72 hours prior to your reservation time.
For no shows or late cancellations, full payment of the menu price per person will be applied to the credit card on file.
If we are able to re-let the booking, no charges will be applied to the credit card.
All non-resident guests will be required to provide credit card details to secure your reservation.
In the event of no-shows or cancellation within seven days of the arrival date, a cancellation charge of the full menu price per person will be applied.
