Swinton Estate is excited to announce a four-day residency of the celebrated seafood chef, Stephane Delourme, fresh from 25 years as Head Chef of Rick Stein’s Seafood Restaurant in Padstow, Cornwall.
From 7th to 11th May 2024, Stephane will host a series of exclusive dining events and masterclasses where you can experience the very best seafood cuisine.
Samuel’s Restaurant will host a spectacular Gala Dinner, prepared by Stephane; learn the art of cooking with seafood in a hands-on cookery masterclass, or intimate Chef’s Table experience; or enjoy a delicious ‘Fish and Fire’ lunch at The Terrace Restaurant and Bar.
Stephane said: “Guests will be able to relax an unwind and enjoy the taste, and discover the magic, which goes into a gourmet menu.
“I cannot wait to get into the Walled Garden and cook using with ingredients sourced directly from the Estate, along with those from the east coast. I will love working with the team of chefs to bring the Estate’s guests a truly unforgettable dining experience. Life is about making memories together.”

As one of the best chef’s in the country, Stephane has spent the last 25 years as Head Chef of Rick Stein’s Seafood Restaurant in Padstow, Cornwall.
Stephane’s career began with an apprenticeship at the two-Michelin-starred Sully D’Auteuil when he was just 16, before moving on to Le Vieux Berlin. From there, Stephane’s culinary journey took him to London where he worked at London’s Roof Restaurant at the Hilton on Park Lane and was honoured to open some of the city’s most distinguished eateries.
After working alongside superb chefs such as Michael Croft at Mirabelle and Martin Webb at Quaglino’s, Stephane moved back to France to work in the popular Parisienne restaurant Prunier. He then worked on the famous QE2 and also in Dublin with the brilliant Patrick Guilbaud in his two-Michelin-starred restaurants.
Stephane has been inspired throughout his career by chefs such as Anthony Bourdain, Nieves Barragan, Gary Rhodes, Michel and Albert Roux, Raymond Blanc, Rick Stein, Martin Webb, Joël Robuchon, Gabriel Biscay and Auguste Escoffier.
Working closely with Rick Stein, Stephane has also travelled to many spectacular destinations including most recently the Holmen Lofoten Kitchen – a unique, seasonal restaurant located above the Arctic Circle.
