With over ten years’ experience in some of the UK’s finest MICHELIN-accredited kitchens, Chef Josh Barnes has created a culinary experience like no other. Combining intimate fine dining with exceptional produce grown, reared and foraged across the Swinton Estate, Yorkshire and the North East, Chef’s Table by Josh Barnes is a true celebration of Yorkshire’s rich food heritage.
Josh is deeply passionate about Yorkshire produce and curates his menus in line with the seasons. From venison reared in the Estate’s own deer park, to vegetables harvested from the Kitchen Garden – the largest hotel working kitchen garden in the UK – and seasonal ingredients foraged from the wider 20,000-acre Estate, each dish reflects a profound respect for provenance, seasonality and sustainability.
Seating just twelve guests, the intimate Chef’s Table experience is hosted within the Cookery School. Proudly featured in the MICHELIN Guide, Chef’s Table by Josh Barnes offers an exclusive opportunity to immerse yourself in the culinary arts and witness the craft unfold behind the scenes, with Josh on hand to discuss the menu in detail, share his inspiration and explore the stories behind each ingredient.
Your evening begins with a seasonal drinks reception of pre-dinner aperitifs, followed by an multi-course tasting menu, meticulously plated before you at the Chef’s Table pass.

Chef’s Table by Josh Barnes is open for an eight-course dinner Wednesday to Saturday from 7pm, and for a lighter five-course lunch on Saturday, from 12.30pm.
Throughout February – March, and July – August, dinners on Wednesday and Thursday will be five courses.

For special occasions and celebrations, make it exclusively yours and indulge in our private Chef’s Table by Josh Barnes experience. Available for between 2–12 guests with our dedicated team on hand to guide you through an individually tailored evening – just for you.
Josh brings years of culinary experience in some of the UK’s finest kitchens to the Swinton Estate including his most recent role as Head Chef for the Galvin Company; impressively retaining its highly coveted Michelin Star, 3 AA rosettes and a spot in the Good Food Guide.
Alongside these achievements, Josh was also awarded the title for London’s best vegan and vegetarian tasting menus.
He’s a passionate forager of mushrooms, wild herbs and flowers, as well as unique ingredients to create dishes inspired by the land and earth that celebrate seasonality.
“My food ethos is very seasonally driven, bringing together produce from our kitchen garden and estate grounds into a multi-dimensional tasting experience, where everything is served at its best – either fresh from our daily harvest, or ingredients that we’ve preserved for use throughout the year. My cooking style combines modern British techniques with undertones of classic French cuisine in a produce-led, process driven experience”.
Tom Henderson, Restaurant Manager at Chef’s Table by Josh Barnes, brings with him 20 years of hospitality experience.
Tom has spent more than half a decade cumulatively at Swinton Park Hotel, previously residing as Restaurant Manager at Samuel’s Restaurant alongside other roles in the hotel. In addition to his deep industry expertise, he brings a distinguished background in wine, notably his tenure as Head Sommelier at Grantley Hall.

Chef’s Table by Josh Barnes is an intimate fine-dining experience, championing hyper-seasonal produce and an estate-to-plate ethos, with lots of unique and interesting ingredients showcased on our menus.
The tasting menu is prepared by Josh and the team exclusively for you on the day, and therefore, we ask the lead guest to make us aware of any dietary requirements or intolerances at the time of booking, or at least 48 hours before the date of your reservation.
Regrettably, it may not be possible to accommodate any dietary requirements not listed on the booking notes after the outlined timescales.
Chef’s Table by Josh Barnes is pleased to offer a vegetarian and vegan tasting menu alongside our regular tasting menu. Certain other dietary requirements can be catered to at the discretion of the Chef, with prior notice.
Although we can cater to dietary requirements, we cannot guarantee to be completely allergen-free, as allergens may well be present in our kitchen.

Due to the nature of the dining experience at Chef’s Table by Josh Barnes, regrettably, we are unable to cater to dislikes. We politely urge guests to keep an open mind and ask for confidence in our menu composition and preparations.

There is no strict dress code at Chef’s Table by Josh Barnes, however, smart casual attire is recommended.
We kindly ask that you refrain from wearing sportswear and flip flops.
We kindly ask that any cancellations to your reservation be made no less than 72 hours prior to your reservation time.
For no shows or late cancellations, full payment of the menu price per person will be applied to the credit card on file.
If we are able to re-let the booking, no charges will be applied to the credit card.
All non-resident guests will be required to provide credit card details to secure your reservation.
In the event of no-shows or cancellation within seven days of the arrival date, a cancellation charge of the full menu price per person will be applied.
