At the heart of every course is a strong connection to the land. Ingredients are sourced from across the Swinton Estate, including the four-acre walled garden, ensuring fresh, seasonal produce with minimal food miles. This close link between field and fork shapes both the menus and the learning experience, bringing sustainability to life in every dish.
Ian Matfin, originally from Newcastle, developed his love of cooking early on, learning from his mother and grandmother. He began his professional career at 21 Queen Street, then the region’s only Michelin-starred restaurant.
He has since honed his craft at leading establishments including Claridge’s, ABode Manchester, and The Devonshire Arms.
