Head Chef of the Terrace Restaurant and Bar

Shaun Burke is the Head Chef of The Terrace Restaurant and Bar. Born and raised on the beautiful island of Jersey, Shaun’s love of food began at a young age, progressing through to an apprenticeship and training under Michel Roux at the two Michelin-starred Le Gavroche restaurant in London.

Returning to Jersey, Shaun took a position at the Michelin-starred, four-Rosette Atlantic Hotel, working his way to Head Chef.

Four years later, he swapped island life for the Yorkshire Dales. Shaun produces dishes to bring his skill, passion and creativity to bear, using produce from the Estate where possible.

Estate to plate

Shaun’s menu features an “estate to plate” approach, utilising flavours and produce from across Yorkshire and the Swinton Estate.
